as a follow up what are the main things that differentiate a DEX from Uniswap? Is there anything they do that sets them apart? Any good examples?

is it accurate to say that most DEXs (at least on the EVM) are basically just forks of Uniswap? and the forks slowly roll out features like v3 and v4 because it takes time to integrate the new code?
