My take: Indian, Korean, and Tex-Mex rely on strong spices and provide a very different experience. Italian food is about simplicity and subtlety. Dishes tend to use the flavour of key ingredients rather than spices. Not saying one approach is better than the other. They’re just different philosophies.

You might like Calabrian food as it tends to be spicier. ‘Nduja sausage comes from the region.
