Rollups are Layer 2 blockchains that help Layer 1 blockchains such as Ethereum to scale. They do this by processing and validating transactions away from the Layer 1 chain, then they "roll up" multiple transactions into one set and submit the data back to the Layer 1 at a fraction of the price that it would have cost.
