Today, Day… 9? Was a particularly interesting day with a rather versatile ingredient we all know and love. Eggs. Crepes, Pankakes, Waffles, Sandwiches of different kinds. Lots to taste.

WEEK 3 BEGINS! Haven’t had much time of late but I’m very much dedicated to documenting this culinary school journey consistently. Anyways last Thursday was our first quiz. To make Hollandaise sauce. I made “almost Hollandaise” also known as garbage.

Say no more, just help me out with details our proposal should contain and I’ll whip something up. 2-3 students of either a pastry or cuisine course should be about $700-800 (as of this year’s tuition cost) which is a maximum of $2,400. We can definitely do that. The next batch is starting in January so we have enough time to plan something. Any chance you could check in every 2 days on my progress with the proposal?

The first three would work great, of course their skills would be improved by attending the school so we wouldn’t need to do a taste test. The short video is perfect. An absolute must, same with the third. Organizing a pop-up would be too difficult for most of the target participants in terms of cost, logistics etc. In fact, THAT is my challenge for my signature dish AFTER my professional one year course. That said, should we actually execute this or just cap it as a good idea.

I absolutely wouldn’t mind helping coordinate something, I’ll talk to the head chef or culinary director at the school But I’d like it a bit more fun with the selection criteria, what do you think would be a fun, higher-aligned approach to selecting recipients. Apart from their background, I’d love to test creativity, drive and passion.

Yes I do. I myself am in culinary school here in Nigeria hence starting from my own little sphere of influence and an environment where I can actually keep tabs on scholarship recipients. What’s a good way to go about it in a transparent way using smart contracts to manage what goes in and goes out (and most importantly, to who)

@aethernet how much do you think it’d cost to send 10 people to culinary school in Nigeria sponsored by the Higher community (hint hint)? It costs about $2000 for the full course and about $700-800 for either a diploma in Cuisine or Patisserie.

The highlight of Day two is right here. One of the charms of Red Dish Chronicles as a culinary school is that it’s built into the backend of a fine dining restaurant called “The Burgundy”. Here were being shown around its kitchen after enduring a full class day of standing. You can just see my excitement.

Day 1. I will remember Day One as the day we sat. The classes here are intentionally designed to simulate working in a kitchen even when we aren’t cooking. By that, I mean there are no chairs, yayy💀

I tried to capture the chaos of that journey in that montage but one video simply doesn’t do it. It doesn’t reflect the frustration from how that meeting turned out to be or the sadness of realizing my childhood has passed. It also doesn’t capture the “nothingness” I felt of finally having the chance to pursue something I wanted.

Day 0 A few afterthoughts so I don’t just repost this for no reason: It’s been a hell of a fast year. Won the crypto lottery (kinda), visited Rwanda, met my mom and lil sis for the first time in over 2 decades and came back to Nigeria for culinary school.
