Lunch on the last day of the long weekend:  
– wine-braised rabbit with boiled potatoes  
– Easter bread

Braised Rabbit Recipe

1. Brown the rabbit meat in a bit of olive oil until golden.

2. Add and lightly saute:  
- 1 chopped onion  
- 2 crushed garlic cloves  
- 2 sprigs of rosemary  
- 1 bay leaf  
I also add a little salt at this stage.

3. Pour in 1 glass of red wine (preferably when no one is watching who might cry over it). Let the alcohol cook off, then add a bit of water. Simmer for 30 minutes.

4. Add 100g of olives and 1 tablespoon of wine vinegar. Cover and cook on low heat for another 20 minutes.
