Update on this: I feel like this problem has decreased by ~50% since (my memory of) pre-covid, more and more breakfasts have vegetables, especially in East Asia. Still far from ideal though.

Most historical breakfast dishes globally seem to be some variation of last night’s leftovers. Congee, bubble and squeak, etc and so tend to contain vegetables. I think it’s really the American led spread of western culture, which was in turn heavily shaped by Kellog’s efforts to make cereal the breakfast food of choice, that played a large role in pushing veggies off the breakfast menu. https://www.mentalfloss.com/article/32042/corn-flakes-were-invented-part-anti-masturbation-crusade Until Kellogg
