Even if the user "owns" the data in their wallet, I don't think it's as private as you infer it is. Any AI can train on the data collected by a wallet.

Onchain startups. /rebase, /basedjobs and more

Meaning... an ad network could still run embedded on an site and trained on the data in your wallet (as opposed to cookie data)
