What's the easiest way to build a bot that calls a contract function every few hours? Is it just putting a PK + a signature in a cron job?

That's the simple way, you could write a contract that pays anyone to trigger the contract every _ hours. I believe there is a gas price oracle you can use to calculate the gas reimbursement.
