a few days ago it got colder in Madrid and I cooked finnish salmon soup (lohikeitto). nothing tastes better than this on a cold sunday morning after a friend's birthday party with lots of champagne and hookahs.

• Sauté onion and carrot in butter.
• Add potatoes and fish stock; simmer until potatoes are soft.
• Add salmon, cook for 5-7 minutes.
• Stir in cream, season with salt, pepper, and dill.

What about perfect 
Norwegian creamy soup? 

- Fry the leek and carrot in olive oil in a well-heated saucepan. 
- Add chopped cherry tomatoes. 
- Stew, add 2 liters of water. Bring to a boil, throw in the potatoes and cook for 15 minutes. 
- Add salmon and shrimps. Cook for another 10 minutes. 
- Pour in cream and add scallops if desired. 
Cook for another 5 minutes. 

Let it to cool a little for 20-30 minutes. 
Eat with croutons fried in butter 👌

you definitely should! it’s very easy to cook and sooo delicious. and kids usually love it too!!

Oooo I don't think I've ever had soup with salmon in it. This looks and feels very European to me which is probably exposing my American-ness  

Now I want to try it
