My cooking skills still have a long way to go, but here are some pics to document my progress! Lately, Iāve been loving silky, pan-fried eggplant cooked in really good olive oil until golden and tender. This time, I mixed it with savory lamb leftovers and added a touch of oyster sauce and mirin for extra depth. Itās not the prettiest dish, but the flavors are rich, umami-packed, and comfortingāand since Iām the only one eating it, Iām calling it a win! Also, I think all the upper back work at the gym is finally paying offāholding the pans feels a tiny bit easierā¦ though Iām definitely exhausted now.
