If we had an award show for crypto (think like the Nobel prize, Grammys,Oscars) & we only used onchain data, what sort of awards should we have? eg: - defi app with the largest TVL - bridge with most volume - apps with the most users in common anything else?

As long as there's no human curation at some part of the process, any measurement will be abused by bad actors. Twitter's most innovative feature in the past 10 years is "community notes", because it requires genuine, human evaluation. We can't measure "quality" with merely an algo checking certain metrics. (Look at the quality vs DAU on Warpcast recently; there are increasing complaints about their "qDAU") So, regardless of the data, human evaluation of that data on key parts of the process will bring the best results. The real engineering problem, imo, is not trying to erase the human footprint from these processes altogether: It is using the human input as minimal, as incentivized and as balanced as possible.
