Doing a brisket this weekend. Current head-plan is to start it Friday night and let it go overnight and into Saturday. Hopefully done Saturday afternoon for an early dinner in nice weather. Any tips for a first-time brisket smoker? Will be on a pellet smoker and monitored with 2x meat probes for temp monitoring.

Did a pork loin today. Cooked to 140 internal, took off and let rest (tented in foil) for 20 mins before slicing. Came out very juicy. 🐖 💦

Ok, pulling them. 195 degrees (F) in the hottest place I could find. Meat feels like butter when probing it with the temperature probe. Will let rest for about an hour and then slice. 😋

Another set of smoked burgers and dogs going for easy grab-and-go meals for the rest of the week. Salt + pepper + graded white onion (for moisture) in the beef. 275 until reddish hue on one side, then flip and apply cheese for another 10 mins or so.
