I don't know of any that do multiple tokens. 1inch's has some code for tracking cumulative balances though. That might be a good start. https://github.com/1inch/merkle-distribution

depends on your implementation and what data you want to encode I think. you can encode address + amount into a merkle leaf and generate proofs + verify using the openzeppelin js/sol libraries as long as your leaves are sorted
