What happens if you throw a bunch of apples into a blender: juice, cider, applesauce or a secret 4th thing? I feel like the answer can’t just be ~it depends how much you blend it~

You get a thin applesauce. If you strain out the pulp through mesh or cheesecloth, you get juice. If you have a *lot* of apples a fun project is to build a DIY cider press out of a car jack, a 5-gallon bucket, and some lumber.
