A lot of the "AI" notetaking tools don't always tag data how I would prefer it's tagged, which leads to me manually tagging things anyways

Did you try mymind? It had nice search functionality, that worked properly even with photos. I used it a while ago but even back then didn't need many manual tagging.

mymind is probably not for everyone. Their approach to note taking is different.
