Nothing special really. I had oak from local trees in the Oak Hill area of ATX that came down during a freeze a while back. I also used a couple pieces of red oak from a tree I removed. Some pieces well dried and some not so well for that good dirty smoke. Just attending to the fire every 15 min for 12 hours. 🍻
