I think of "users don't care about decentralization" as being similar to "consumers don't care about what's in their food"

I concur! Users just need the guarantee that their experiences will always be honest and sound, the same way a consumer trusts that their food will be well-made and delicious. Abstractions are great for delivering this but ultimately it comes down to the final output being what they find useful.
