Today i will tell the story of water spinach or kangkong
This simple veggie actually save a lot of people in my place.
Vietnamese people been through many wars. When one side lost and have to leave an area, they usually destroy everything: agricultural facilities, crops, animals etc.... Many people already died in starvation. So tragic. You can read about that in many Vietnamese novels.
But this water spinach, its role as emergency food helped save many lives 
They're rich in nutrition and require no care to growth. Just plant some in muddy soil (like lake , canal, ...) and you can harvest large amount after few weeks. Leave can be eaten both cooked and raw and other part can be used for animal feeding
But water spinach got one drawback. As aquatic plant and natural water purifier, they also take many toxic elements like heavy metals. So now farmers are trying to grow clean kangkong with hydroponics method
Nowadays, when no need for emergency food, we stir fry kangkong or make soup with it.
