Do people actually consciously make a judgement about quality of service when they tip??!

I always just mindlessly add 15-20%. So the whole "tipping incentivizes quality of service" argument has always seemed unrealistic to me.

Yes and no. My tip % is the same inside the normal range of quality but if a place is exceptional / very unique / I'm a regular then I tip high. It's nice to have the option to give more for a very special experience.
