Is there a phone OS designed for children? I would expect a restricted by default OS where all options (and what apps/domains can be accessed) are managed by a parent device.

When they reach screen age (probably not before 12) I plan on giving them an Apple Watch with family restrictions

12 sounds really old to me to disallow any screen. What’s with technologists adopting increasingly anti tech posture for their children? Do you feel like you were ruined?

I definitely agree the “exposure to the public feed” would be the thing I’d be inclined to postpone the most, but there’s a world of wonderful digital tools that are local first that I’d love to enable (even solo) long before that.

12 is my target for owning their own device. Before that what they have is supervised screen times for specific tasks. 
Don’t worry by 8 they’ll be printing their own toys, but on the family computer with dad. Unsupervised access to an infinite scroll of short dopamine shots is too dangerous.
