what is your secret recipe to brew a pour over?

here is mine

dripper: Kalita Wave 185
beans: 30g for 2 people 
hot water: 90c(194f), 420ml
blooming: 30sec, 60ml water
brew time: 3-3:30 min
plus: 
- rinse a paper filter 
- avoid pouring along the edges of the coffee bed
- don't drop the last foam

- 15 grams of lavazza super crema 
- encore grinder 
- gaggia classic 
- 26-30 seconds pull 
- rinse and repeat, chase with cold shower
