I’ve crossed the rarely cook timeline; so lean on my wife for most meals til next fall.

When the greens are good we rarely do much with them.

Chop perpendicular to the stem to get a bit of stem and leaf.

Oil or butter 

Soften or sauté onions

Add choi and cook for 2-3 minutes.

Salt

If getting fancy add either more butter, pepper, lemon juice or whatever.

We just use choi as a quick side dish.

The kids prefer to just munch on it raw; I like it cooked a bit to unlock the nutrients.
