Your statement makes it sound like they’re better in all cases. This is not true. There are cases where each is better. 

To think that airbnbs would be better in 100% of cases sounds crazy to me. 

Uber over taxi… I don’t see why they shouldn’t disrupt at 100%. But Uber is not “worse” than taxis

Maybe a better way to word it is that I feel like the median airbnb and uber experiences have certainly gotten worse (in my personal experience)
