For meeting notes, I use granola.so. It does transcription and notes/summaries. Love that. For my own writing, my notes app isn't AI powered. It's just the default Apple Notes app. The mission there is to be constantly available. I've also used Bear in the past. Some people love Obsidian. It's just a receptacle for getting thoughts out and organizing them.
