trying a local roaster’s single origin washed process from a 4th generation guatemalan producer, Finca Santa Margarita. the estate is largely run by women and hosts an on-site school, clinic, and reforestation program. pretty cool.

the roast is pretty old school and dark, honestly a bit surprising for a hip third wave roaster. maybe we’ve come full circle and this is trendy now vs. uber light roast, fruity/floral espresso.

its been all over the map! it has swung away from the Scandinavian super light style a bit. Ive had a few food bags from Traffic.

yeah definitely feels like super light is out. personally never liked that style of roasting for espresso but totally get it for pourover.
