I want to know what on earth people are doing on Mainnet that sends gas this high. I check gas guzzlers on Etherscan, Uniswap at 14%, then USDT. Doesn't look out of the ordinary. Let's check Uniswap analytics then. ETH-with-stablecoin pools doing $ 2.5B volume a week. Am I missing something? Is that it?

It's mostly MEV I think. And I don't mean frontrunning necessarily. Where there is liquidity there is a market to be made. I would bet that gas consumption is exponentially linked to price volatility, with spikes around liquidation levels.
