The obvious hint that it’s true is that you could remove the colors and the legend, and yet virtually everyone would agree on which day goes where on that area plot.

Joke aside, the meme is formally true if and only if the ratio of the perceived length of Monday to the perceived length of a week is equal to the ratio of the perceived lengths of two consecutive days of the week. Proof follows from the definition of the Golden ratio.
