I occasionally end up watching cooking shows (as an innocent bystander when my wife watches them) and I’m always amazed how pastry making is a whole other technical level above even the most refined cooking

If you look at the stuff that Amaury Guichon and other top pastry chefs are doing, it’s highly technical, involving scaffoldings, sculpted materials, coloring, fine temperature control, etc.

say more? for a pleb like me, it kinda all looks the same! although i have to admit that whole 'deconstructed` trend in general was conceptually kind of interesting when i'm not paying for it 😂
