Roasted Vegetable Soup Recipe: 1. Roast veggies: Toss cubed squash, carrots, zucchini, peppers with oil, salt, pepper. Roast at 400°F for 25-30 mins. 2. Soup base: Sauté onions and garlic. Add roasted veggies and broth. Simmer 10-15 mins. 3. Blend until smooth. Season with salt, pepper, lemon juice. 4. Serve hot. Optional: garnish with cream or herbs. Nutrient-rich and flavorful!
