Is there any good data on blockchain state growth? 

Want to understand how many megabytes or gigabytes per day are being added to full nodes in Eth, Solana etc.

Solana's is a bit hard to calculate. If you were to measure from genesis with no pruning, it's inching closer to a petabyte of data, but most generally useful, the current state is closer to the low tens of terabytes
