What are you all having for dinner tonight? Hereโ€™s my plan: I had too many yellow heirloom tomatoes from the garden and couldnโ€™t eat another tomato sandwich so Iโ€™m making a simple soup! Roasted the tomatoes with onion and garlic for 30 minutes at 400 degrees. Added veg stock and purรฉed with a handheld immersion blender. Planning to add a little heavy cream and garnish with parsley, and will serve with some grilled cheese sandwiches.
